CLASSIC COOKED
EGG NOG
(non alcoholic)
6 eggs
1/4 cup sugar
1/4 teaspoon salt, optional
1 quart milk* divided
1 teaspoon vanilla,
Garnishes or Stir-Ins, optional
In large saucepan, beat together eggs, sugar and salt, if desired. Stir
in 2 cups of the milk. Cook over low heat, stirring constantly, until mixture
is thick enough to coat a metal spoon with a thin film and reaches at least
160°F. Remove from heat. Stir in remaining 2 cups milk and vanilla.
Cover and refrigerate until thoroughly chilled, several hours or overnight.
Just before serving, pour into bowl or pitcher.
*Garnish or add stir-ins, if desired. Serve immediately.
~For faster preparation heat milk until very warm before stirring milk
into eggs and sugar. ~
MICROWAVE: In 2-quart liquid measure or bowl, beat together eggs, sugar
and salt, if desired, until thoroughly blended. Set aside. In l -quart liquid
measure or bowl, cook 2 cups of the milk on full power until bubbles form
at edges, about 5 to 6 minutes. Stir into egg mixture. Cook on 50% power
until mixture is thick enough to coat a metal spoon with a thin film and
reaches at least 160°F, about 5 to 6 minutes. Stir in remaining 2 cups
milk and vanilla. Continue as above.
*GARNISHES AND STIR-INS

Chocolate curls
Maraschino cherries
Cinnamon sticks
Orange slices
Extracts or flavorings
Peppermint sticks or candy canes
Flavored brandy or liqueur
Plain brandy, rum or whiskey
Fruit juice or nectar
Sherbet or ice cream
Ground nutmeg
Whipping cream, whipped
Note: All microwave cooking times are based on a full power output
of 600 to 700 watts.

Wassail
It's time for the pewter mugs and the wassail
feasts. Centuries ago this drink was popular around Christmas time and it
still holds true today. It's a cinch to make and those heavenly aromas fill
the whole house. Wassail is also a greeting, meaning "Be in good health!"
It also hints at riotous festivities and lots of revelling. At any rate,
you can make this ahead of time and then just warm it up when needed. For
a punch bowl of Wassail, you'll need:
1 gallon fresh apple cider
2 ea. cinnamon sticks
2 pieces cloves
2 tsp allspice
1 tsp. nutmeg
1 cup sugar
Place all the ingredients in a pot and let simmer 30 minutes. Adding rum
is optional. Charles Dickens describes
hot apples that were bubbling and hissing in a mighty bowl of wassail. This
conconction does go extremely
well with apples. I like to pour it over some peeled apples pieces and top
them with a little brown sugar
then bake in a 400 degree oven for about 30 minutes. You can call them
Baked Apples Wassail.

Christmas Carol Punch
Ingredients
2 red apples
8 cups clear apple cider
8 cinnamon sticks
2 teaspoons whole cloves
1/2 cup raisins
1 large orange
1 lemon
1/4 cup lemon juice
Directions
1 Core apples, and slice into 1/2 inch rings. Cut orange and lemon into
thin slices.
2 In a dutch oven, combine cider, cinnamon, cloves, apple rings, and raisins.
Bring to boil over high heat.
Reduce heat to low. Simmer 5 to 8 minutes or until apples are just tender.
Remove cloves, and add orange and lemon slices, and lemon juice. Pour into
punch bowl. Ladle into large mugs, including an apple ring, some raisins,
and citrus slices in each serving. Serve with spoons.
